Cooking Mom...just for a night!

Sometime in the last week or so, one of the bloggers who I follow posted about making Italian meatball soup from a Pioneer Woman recipe. I followed the link (which I now cannot find anywhere) to the recipe and it looked great...but also very involved...and it included cheese, which isn't an option in our house if all of us are to eat the same meal, which is what we try to do on most nights.

So, I pulled out my trusty Better Homes and Gardens cookbook and found a recipe sans cheese. Started with the meatballs (this is about 1/2 of them).....




Cooked them and started the soup pot with a yummy mix of beans, mushrooms, tomatoes, pasta, and spinach....



And voila...soup! In under an hour, which was the really amazing part.



It was sooooo good. I think this one may become a regular in our house on damp, cloudy winter days like today. Jack loved it. Jenna only ate it so she could have another piece of bread and dessert...and tried not to eat any of "that green stuff."

I helped myself to two bowls, so now I am trying to tear my full tummy of the couch and get a quilt loaded on the frame...we'll see!

Oh, that looks soooooo good! We are soup lovers over here!!Nothing better on our dark cold nights here in western NY that the smell of soup and a nice crusty bread!

It looks really good - although in my house, I'm the only one who likes "the green stuff."
Looks good; it's been soup weather here, also.
I have ingredients ready in the fridge to make Italian Wedding Soup for tomorrow. Very flavorful, but not too heavy. Thanks for sharing.
This looks great, thanks for posting it. Pioneer woman is great, but can sometimes be a bit potsy. Also, seems like PW uses a whole lot of butter! Better Homes and gardens is a great book.

Soups looks wonderful! I can almost smell it.
That looks awesome!! And no cheese cuz of the dairy allergy, right? What a bummer!
